I first saw these on a YouTube cake baking video and thought, what the heck??? The host explained that they prevented the sides of the cakes from getting caramelized and controlled the rise of the cake so you wind up with nice even layers that won't need trimming. These did exactly that. (However, my cakes did come out underbaked and I think these may have been the culprit. On my next attempt, I'll try a slightly longer bake time when using these. Maybe it was due to inaccurate oven temps...who knows? You really have to experiment.They weren't as easy to apply to the pans when they're wet as I thought. It was a bit of a struggle to get the straps through the loops and get them to stay in place and not keep falling off. (I'm sure it's a common issue with all baking strips like these, though.) I'm not a very experienced cake baker, however, so do take everything with a grain (or 1/4 tablespoon) of salt.
