Stainless steel is the way to go.

I've been using glass weights for a while now to hold down my ferments, but I've noticed those don't fit the full diameter of the jar, and don't keep the little bits down. So, I'm trying these to see if they do better. On initial look, the plastic press seems to have the coverage for the full jar diameter, and the holes in it seem to let the brine through while being small enough to not let any material through. The spring is stated to be food-grade stainless steel, though they seem duller in luster than I'm used to seeing in stainless. I guess we'll see. I'm just starting to use these, so I'll have to see how they hold up after being in ferment for a few months.
