I have owned many different kinds and sizes of springform pans. The Zenker is simply the best. The glass bottom makes it easy to serve right from the base, it doesn’t leak, and the heavy duty handles make it a breeze to remove from a hot oven.

Bought these pans August 2019, and now they are peeling the non stick coating. Amazon will only honor the manufacturer 1 year warranty, and only offered a $10 credit. Not happy at all. Product should be replaced! Bought less expensive bakeware from other retailers with better warranty and customer service.

I bought this springform pan after reading Cook's Illustrated reviews comparing high end pans. My first pan came with a scratch on the glass and Amazon immediately replaced it. When I baked my first cheesecake, I loved the glass bottom which allowed me to see how brown the crust was. I baked a classic New York Cheesecake recipe I have had for years that involves five 8 oz. packages of cream cheese and seven eggs. It is a big cake serving about 20 and it fit perfectly in this pan. I did start the oven at 500 degrees and baked it for 12 minutes and did not have a problem. I baked it in a water bath as Cook's suggests and it turned out perfectly. I previously had cheap pans that rusted after a brief time. I expect no problems with this pan and am quite sure the company will stand behind the product if I have an issue.

I chose this pan because of it's fabulous reviews on American Test Kitchen. They were right. No springform is totally leakproof (wrapping it in heavy duty foil is the answer that that issue); but it is perfect in every other way....the glass plate is easy to cut on, looks nice and lets me see the bottom if I need to, and the handles are terrific. I always make my cheesecakes in a water bath, and getting a normal pan out of there is a pain. The handles make it significantly easier...

I am pleased with the performance of this pan, it releases well and clean up is pretty easy. There are a few problems:They say heat resistant up to 450 deg. My NY cheesecake recipe calls for 500 deg. starting temp which gets reduced to 200 after 10 minutes. Not sure that this is a problem because of the short time at this temp but is a concern.They claim that it is 2.9" high, I measure less than 2-1/4" from the inside bottom of the pan to the rim. This becomes an issue when trying to bake that deep NY cheesecake, I have leftover batter from my recipe.The sides of the pan are made of aluminum and the handles are steel. I had to return it 2 times because of poor packaging, it bounced around in the box hitting the handles and bending the sides. Not a performance problem of the pan, just pointing out that the sides are not very stout when it has a heavy glass bottom and handles.

This pan is top rated by America's Test Kitchen/Cook's Illustrated for a springform pan. It has worked very well for me. When I first poured water in it to measure the volume, it did leak a little, but not when I actually made cheesecake. And springform pans, according to the manufacturer, are not supposed to be completely leak proof, just reasonably so. Some folks said that my cheesecake was the best cheesecake they'd ever had, so I have to give some credit to the pan (the rest goes to the America's Test Kitchen Family Cookbook for a great recipe!). The handles are what makes this pan stand out, as it is super easy to lift. I had no problems with it, would purchase it again, and highly recommend it.

I am really surprised at the quality of this pan. I was a tiny bit skeptical about leakage etc., but I had no problem with any seeping. Just in case I put a cooky sheet under this pan. I used the recipe for a very good cheesecake out of Cooking Illustrated, who by the way recommended this particular pan. I checked many places and found this to be the best price. Thank you for listening. One thing I did do was to fill the bottom of the pan with a little more graham cracker crust than ordinary because of other reviewers & possible leakage. It was a very good looking chesecake & quite good.

This may have been the top rated springform pan by Cook's Illustrated, but I must question that rating after receiving two pans today. Both suffered from flimsy, warped sides and handles that flexed so much that the pan actually distorted. I suspect that over time, the metal surrounding the handle rivets will crack from fatigue. Running my finger along the inside of the pan revealed numerous high and low spots, especially around the spring joint. The glass bottoms did not suffer from any defects, although I found seating the bottom properly to be somewhat awkward. Overall, I am extremely disappointed and will return the pans immediately. On the plus side, my Kaiser La Forme Plus has performed flawlessly: perfectly smooth sides, true non-stick performance, exceptionally sturdy and never a leak. Handles seemed like a nice touch, but I think I'll stay with the tried and true and order a couple more Kaisers to round out my bakeware collection.
