Let me start by admitting something; I can barely cook. My culinary résumé includes eggs... and that’s about it. So naturally, I bought this cast iron fajita skillet to make eggs. When it arrived, I was immediately impressed, and slightly terrified, by how heavy it was. I genuinely questioned if I needed a gym membership just to use it. Flip an egg? I could barely flip the skillet!Thankfully, my wife stepped in like a seasoned kitchen coach. She took one look at it and said, “This is perfect for fajitas, grilled meats, and keeping food warm.” I asked, “But what about eggs?” She gave me a look that said, “Bless your heart.”So, lesson learned, this is a fajita skillet, not a scrambled egg sidekick. But it’s rock-solid, retains heat beautifully, and makes your food look straight out of a restaurant. Just be prepared, it’s not a lightweight pan, so either know what you’re doing or start training your biceps.

For what it is, as a cast iron pan, its exactly as desired and what you'd expect. The finish is rather smooth even, as compared to basic cast iron that we're all familiar with.As for usability, I've got mixed feelings The odd shape makes for a specialized cooking condition, where you don't have a lot of food. Rather though, I think this is more for presentation and to keep food hot at the table. Like a sizzling Fajita dish from your local Mexican cuisine restaurant. As a small cast iron pan, you can certainly fry a couple eggs, and other stuff for a single person or two, but I think I miss the point of the oval instead of round shape, except for presentation. Round just makes more sense for cooking.Still, a good piece of cast iron, the casting is good and smooth, no odd bubbles bad sand mold marks.
