Tips Before Use

Soak the crock in salt water for 2 hours to remove any lingering soil smell leftover from the manufacturing process. Let dry completely before storage.

Wash your utensils, chopsticks, or hands before grabbing something out of the jar.

Do not place oil inside the jar. Or this may influence your food taste.

3 Steps To Ferment

Step 1:

Prepare your ingredients by washing and placing your ingredients into the crock.

Step 2:

Use the glazed ceramic weights to keep your ingredients submerged. Add your brine to fully submerge the ingredients and weights.

Fill the water groove along the top of the crock with brine or filtered water. Check every few days to ensure that there is still liquid in the groove.

Superior to Standard and Wide mouth mason jars

The most common fermentation crock size has a capacity of 5 Liters or 1.3 Gallons. That means it can hold 5 times more fermented foods than the largest mason jar (1 Quart) or 10 times more fermented foods than a standard-size mason jar (1 Pint), making it significantly easier to produce large quantities of your favorite fermented foods like kimchi, sauerkraut, pickles, kombucha and more.

Larger fermentation crocks can make up to 20 to 30 times more fermented foods than a standard-size mason jar, while even the smallest fermentation crock is capable of making 4 times more.

The jar is a good size. The weights are not heavy enough and there's a hole in the ceramic weight.

It is an attractive fermentation jar, no doubt there. However, the two weights to keep the food below the fluid level barely fit into the mouth of the jar; and then, unfortunately, are very barely heavy enough to work. I had to adapt and put a couple rocks in. Nonetheless it is an attractive jar and so far, my kimchi seems to be coming along nicely.

De buena calidad y de buen precio por lo que es. Un punto negativo : el juegos de 2 pesos de cerámica porosa después de utilizar los (se oxidan ?) se vuelve rojo. Son probablemente bacterias. Esto no es agradable y merece mejoramiento, seguro. Los limpie con agua y brocha pero se quedan un peco rosados. Les puse al pleno sol un tiempo y ahora están bien ahora.

If overfilled then it gets a little bit tough to get the weights fitted inside. I'm thinking about cutting the weights in half, to have four pieces that are easier to insert. From the factory, if the weights came in three rather than two pieces insertion would be improved. The water seal is very generous, allowing about a week's worth of water evaporation before needing more water, and has enough room in the water groove for water to bulge up from pressure inside without spilling out onto a shelf or countertop. Large opening makes it easy to get ferment out of the crock. It's thick and strong enough to last a lifetime. I have only one strong dislike: the handles slope awkwardly underneath, making for a poor grip, especially if there is moisture on them or on the hands. Because three gallons of ferment and the stoneware add up to a heavy lift, the handles should offer a more secure grip.

I’ve been wanting to make sauerkraut for the first time but didn’t have the right tools. This crock was great! The weights were perfect, I had no problems with fermenting, and was able to can 6 pints of sauerkraut. I highly recommend this crock.

Two things keep it from being great. The included self adhesive feet are mandatory. There is a foot or nipple in the center bottom that protrudes more than the rim. If you don't put on the self adhesive feet it wobbles on the center. If you use it without them you stand a good chance to break the crock. The second thing is that the weights are difficult to put in when the crock is loaded. The mouth of the water lock is smaller than the inside. The weights are a tight fit to the inside, and are bigger than the mouth. That means you have to tilt them to get them in. They hit the contents, and you end up pushing it into them to get them in. Everything else works great. I plan to split the weights so they are quarters rather than halves to make it easier to use.
