This diffuser is on the thinner side than I thought. I works great on my electric stove. On a gas stove depends on what temp you are using. Great thing is the handle comes off ! I use this for soups & stews. I gave one as a gift, they have a gas stove. I think they use too high of heat.

I guess I should have understood that flame reducer means slower cooking. I believe this product does help even out the flame, but it definitely increases cooking time.

I've had a diffuser of this design for 30 years, and the wooden handle on it is now only a scorched shadow of its former self. I use it about 2-3 times a week, and it has almost reached the end of its lifespan.I've tried the ceramic diffuser style once, and it did not work nearly as well as this design. With two stainless steel plates with small holes to allow the heat to disperse into the empty gap between the plates, it is far superior to a solid piece of anything.My gas stovetop has a burner that is supposed to be "really good for melting butter." Yeah, right. It is just as hot as all the rest, even on the lowest setting. Using this diffuser, I can melt butter even on the largest burner on low.I use this diffuser for so many things:- Warming soup from a frozen state without burning or having to stir constantly- Melting chocolate, wax, butter, etc.- Warming dairy products without scalding- Best of all, because I am so familiar with the design, I trust it. I can turn my back on it and not worry.The handle is a big improvement over the old wooden design. It flips up or remains horizontal and stays in position. If you have a giant pot, it is easy to remove the handle entirely so it's not in the way of the pot sitting flat.I highly recommend this product.

I dislike the fact it was dented still works don't know if it will hurt my induction cooktop overtime I bought from amazon. I want to send it back but been having a hard time walking its very icy here for my walker

I use it to simmer rice on a gas stove because the open flame doesn’t go low enough for cooking the rice without burning it. So far so good.
