About Itohkyuemon

Itohkyuemon is a tea shop in Uji, Kyoto, dedicated to preserving the tea traditions passed down from the Edo period while bringing new value to Japanese tea.

Since the late Edo period, Itohkyuemon has been carefully crafting tea with a commitment to quality, supplying its meticulously finished teas to renowned temples and shrines.

Characteristics of Uji Matcha

Around mid-May, during the new green season, the tea-picking for Uji matcha begins shortly after Kuj?kunichi, the 99th day from the start of spring. The best time to pick is when the new shoots bear their fifth leaf, a stage known as isshin goyou. High-grade matcha, often used for tea ceremonies, is still hand-picked one leaf at a time, as it was in the past.

The freshly picked leaves are processed on the same day. Steamed but not kneaded, they are then dried using traditional methods to produce tencha, the raw leaf for matcha. This tencha is then carefully stone-milled to create "Uji matcha."

How to Prepare Matcha

Koicha (Thick Matcha):

Add a small amount of hot water to a larger amount of matcha, then gently move the tea whisk to knead it into a thick consistency.

Usucha (Thin Matcha):

Add hot water to about 2 grams of matcha, then use the tea whisk in small, rapid motions to create a soft foam on the surface.

Quality matcha! I bought this tin to keep at work as the small size fits nicely in my desk. I hadn’t tried this brand before and was pleasantly surprised how smooth and mellow it tastes. I will definitely be reordering it when it runs out.

I was a little skeptical that this was a genuine Itoh Kyuhemon product — it seems like knockoffs may be out there — but from what I can tell this is the real deal.Matcha is an acquired taste. Although I did not visit the Itoh Kyuemon tea shop when I was in Kyoto, I did try matcha in my visit to Japan. This product tastes very much like what I remember. If you’ve had green tea, imagine a much thicker, more flavorful version of that.Following the included directions, I put 2g of powder in a tea bowl and added 70g water. I don’t have a tea whisk, but I did my best with a spoon. 2:70 makes a pretty strong drink. I diluted to 2:110, and that was more palatable for me. The taste was good — a very smooth but pungent green tea flavor. I did have some difficulty getting the powder to dissolve. There was a thick slurry left in the bottom of the cup, to the point where I was able to add another 100g of water and end up with a medium strength cup of tea.4/5 stars. If you like matcha, you’ll almost certainly like this. If you like green tea and are curious about matcha, this is a good place to start. In my opinion the quality and taste is excellent. However, I did take off a star for value, because at the current price of $35, you’re paying almost $3 per serving. The same 20g container is about 1/3 as much if you happen to stop by a Itoh Kyuemon shop in Japan.
