If you are expecting red oak as used in Santa Maria style BBQ then you're going to be disappointed. This is not red oak Quercus parvula var. shrevei. It may be what is also known as red oak in the Eastern US, Quercus rubra . California red oak has a distinctive smoke smell and flavor far removed from this product. Don't get me wrong; there's nothing wrong with this wood - it just isn't the red oak used in Santa Maria style BBQ.
