I set myself a goal for 2025 to learn 8 different styles of pasta, to include gnocchi. There are a few good YouTube videos explaining the use of these boards for gnocchi, but also garganelli. This is kind of like a ribbed penne. First time, cut the pasta sheets into square. Wrapped a square over the dowel, diamond style, to match and overlap two corners. Rolled down the board and had my new found pasta shape. Gnocchi is next on the list, but not looking forward to making the dough.
