The racks hold the shish kabobs off the grill. Now the kabobs cook easily and no cherry tomatoes falling through the grates. If you want a slight char on the kabob for your chicken or beef, it's easy to do. Just let the skewer sit directly on the grill for a moment or two after the kabob has been cooked. The short time ensures that the kabob will not stick to the grill.
