This 5lb bag of peaberry green coffee beans from Nyeri County, Kenya offers a rich and complex cup. Grown at high altitudes by smallholder farmers, these specialty grade Arabica beans produce a lively, sweet cup with notes of Stone Fruit, Cranberry, and Honey. Peaberry beans are smaller, denser coffee cherries that develop when only one bean matures inside each cherry, instead of two, concentrating their flavor. Once picked, cherries are delivered to the factory where they’re sorted to remove immatures, insect damaged, and unripe cherries. After sorting quality cherry, recording and logging it according to grower, it’s then pulped and soaked for 24 hours to loosen mucilage for the washing process. Once it’s been washed clean the parchment coffee is taken to raised beds where it will sun dry for 14-21 days. At the washing station they only allow coffee to spend 4 hours per day under sunlight, protecting from overexposure to harsh sunlight. Coffee is then hand sorted one more time and placed in “airing bins” after being dried to rest before being delivered to the dry mill for export preperations.
