Gelification

Gelification is the process of turning a substance into a gelatinous form. Liquid substances are converted into solids with the help of a gelling agent.

Common gelling agents come from natural sources and include:

  • Agar-agar
  • Gelatin
  • Iota Carageenan
  • Kappa Carageenan
  • Gellan gum

Emulsification

What do chocolate, mayonnaise, salad dressing, milk, butter and ice cream have in common? All of them are emulsions!

Emulsification is the technique used to incorporate and stabilize air bubbles in a liquid mixture. It is possible to incorporate air bubble into a liquid simply by whisking vigorously.

Natural emulsifiers:

  • Soy Lecithin
  • Methylcellulose

Depending on the source of calcium ions, 2 types of spherification can be used:

  • Basic spherification which is preferred to create small balls or caviar
  • Reverse spherification which is the preferred method to form larger spheres, also called flavor bubbles,

These agents are used for spherification:

  • Sodium Alginate

Several of the recipes they advertised weren't in the book. The only one I saw was the chocolate sphegetti. It looked great and the recipes are easy to read, but the book only has 5 recipes, not 10 and the pamphlet explains more, so I'm not sure why they didn't just combine them into one book. The sphere mold is also a lot smaller than what it looks like in the picture. For the record, half the book is in French, so that's kinda cool if you want to practice a language.. Overall, I'm happy with the quality and it is a decent starter kit. I just would argue it's not worth $50. I would have put this at around $30-$35 reasonably. Especially because the book advertises their other products, so obviously they're trying to get you to buy more from them anyways. There's just not enough in this kit to justify $50. I'm going to shop around again and if I can find the ingredients and tools for cheaper, I'm sending this whole kit back. The recipes that are actually in the book don't really look worth keeping around. I'd only recommend it for the convenience and maybe if you want to send it to someone as a gift because the presentation is nice.

I absolutely love this product! I bought it as a gift for someone and after opening it, I know the recipient is going to love it. He loves to cook and there's so many new techniques that he can learn! And hopefully cook for me in the process! The pictures in the book are absolutely beautiful and I'm excited to learn more about spherification since we are currently working together to create some new cocktails with a show! I’ve bought this product in order to dig dipper into leaning molecular kitchen. The box with items and book look gorgeous, delivery was fast, on timing manner, without any single damages. I’ve started reading the book already and hope will be doing my experiments soon. I think it’s a great kit with samples for any cooks and amateurs who want to challenge yourself in culinary science.

Contains everything you need to get started. Clearly marked and easy to use. Some of these processes require additional special ingredients like distilled water (to be sure theres no calcium in the tap water), so read your instructions before beginning your project. You may need another trip to the grocery store ;-)
