Wine caps are a low-maintenance mushroom variety. This species isn't too particular and can grow on a wide variety of materials and tolerate more heat and sun than most species. This ruddy-capped mushroom is also a fast grower and will come back year after year.

Bed Preparation: Give Your Spawn a Healthy Start

Properly preparing your mushroom bed will give you the best yield of healthy, tasty mushrooms. If you're starting in a weedy area, lay down some cardboard first. Hardwood chips and straw make for great wine cap food. Layer your spawn with these bed materials and keep it moist, but not soggy.

Prolific Perennials

Wine caps, also known as Garden Giant or King Stropharia, are fast growers and will often fruit within a single growing season. Once established they will naturalize and continue producing year after year. You can even take material from an established wine cap bed and use it to inoculate new beds.

Delicious and Dynamic

You're unlikely to come across these burgundy beauties at the store but they are a tasty and versatile mushroom. With a mild, earthy flavor reminiscent of artichokes and potatoes they can be sauteed, grilled, stuffed and baked, incorporated into soup or risotto and more.

  • Spawn is the living fungal culture, called mycelium, grown onto a substrate. It provides the backbone to any mushroom growing operation. Think of it as the equivalent of seeds for a mushroom farm.

  • North Spore produces 100% of its spawn at its facility in Portland, Maine. Spawn is produced in-house in our laboratory on millet and wheat berries and then mixed into a sawdust-based substrate and allowed to myceliate the substrate.

  • Wine cap, nameko, chestnut, oyster, blewit, almond agaricus, and morel will all grow in beds.

  • With the exception of almond agaricus, spawn will last 6 months to a year in the fridge, but the sooner you use it the better. Store almond agaricus spawn at room temperature, away from direct sunlight and use within 6 months.

  • One 5.5 lb bag of wine cap spawn is enough to inoculate a 16 square foot bed.

These mushrooms are a fantastic purchase! We added more garden boxes and wanted to add spores! Excited for more spring rains to help get the colonies off to a good start! They are delicious little surprises! I highly recommend them for a garden addition!
