I decided to try out the Ravioli Maker by Cucina Pro by making just enough dough for one tray of ravioli. (That's 100g of flour, tiny pinch of salt, 1 egg, a little olive oil, if you want to use it.) For my lasagna sheets, I stop with the number 4 setting on my kitchenaid pasta roller attachment. I wasn't sure how thick the dough needs to be for ravioli, but that same setting gave me a sheet just a little over twice a long as the ravioli tray, so I went with it.I placed half of my sheet on the tray, being sure I had plenty of overhang on all sides. Then I pressed the form into the dough sheet, stretching the dough into pockets for the filling. I think next time, I will be more careful to lay the dough sheet very, very loosely on the tray, lifting up the edges as I press the form into it, because I found my dough snapped back a little—but I hadn't let the sheet rest after rolling it and before laying it on the tray, so that could be my fault for not letting the gluten strands relax. In any case, the form came right back off the dough with no sticking. I filled each pocket with a rounded teaspoonful of leftover ricotta mixture from the lasagna I made this morning.I laid the other half of my dough sheet over top and used my rolling pin to seal and cut the ravioli.I had read that some users had trouble with their dough sticking to the tray, but I wonder if maybe their dough is just too wet to start with. I absolutely did not have a problem with my dough sticking. In fact, it slid around a little while I was using my rolling pin to seal and cut the ravioli.I don't know if the inside edges of my tray (the separations between the individual ravioli) are a bit lower than the outside edges, but my rolling pin didn't hit them all at exactly the same force. (This is where my re-rolling caused the dough to shift around). I pressed the few bits not completely separated with my finger to finish the job. The ravioli popped right out of the tray.All in all, after the dough is made and rolled, the ravioli-making process took about 2 minutes. Couldn't have been easier. I think the next time I make ravioli for real, instead of this ¼ batch of pasta dough, I'll make a double batch. Forming ravioli will, I'm betting, be a nice mindless task to do while listening to music or chatting, and I'll have lots to freeze for convenience later.

The ravioli mould works very well. The size of the ravioli is reasonable (most are too tiny) and it works well. It feels sturdy and it was easy to clean. We even liked the recipe for the dough and filling that is included. I would buy it again.

This is fairly easy to use. We use a pasta roller for the dough and put the sheets over the ravioli maker, then use the press tool. As other reviewers have mentioned, spray the maker with oil and they fall out perfectly. I put them in a cookie sheet, make 2 layers, separating the layers with wax paper dusted with flour then freeze. They are very easy to separate when frozen. My only problem is the cleaning. I put it in the dishwasher and it came out tarnished. Nothing I could do will remove the black residue. My dough had black residue on it so I had to discard it. Then I tried using it with a layer of plastic wrap but that has to be adjusted with every new batch. There are no warnings on the package nor on the instructions not to put it in the dishwasher. Not sure if anyone else had this problem. I did contact Cucina but received no reply.

This tool takes the guesswork out of making ravioli! It's almost foolproof. The plastic pusher creates nice pockets for the filling. I do use egg-wash to help insure they don't come apart when cooked. It's as easy as can be. Add the second layer of pasta, use a rolling pin to push the dough down over the metal and voila!
