This strain is capable of fermenting excellent beers up to 8.5% abv. but can tolerate as much as 11.5% abv. These features make the Safbrew T-58 yeast ideally suited for many Belgian Ales and Wheat Beers. I've used this as a professional brewer to make small batches (5-6 packets per bbl.) It's fruity and phenolic with banana, clove and peppery notes. I've loved the beers that I've produced with it, and it's easy to use. There are a lot of variables with this yeast that you should keep in mind depending on what you want to produce, and you should take detailed notes so that you can adjust it for subsequent brews. The pitching rate, gravity of the wort, oxygenation level, and temperature are all extremely important. Having said that, it's also quite versatile. You can push the yeast by holding back on pitching rates and oxygenation to get more phenolics, or you can treat it well and get a softer character. Regardless of what you do it's very easy to use and fairly inexpensive compared to liquid yeast.

Disappointed. This is not fresh yeast... expiration is November 2020. Normally would expect at least 2 years or more for a dry yeast from Fermentis. So now I have 10 packages of yeast and it won't be any good before I am able to use it all. Seller should be disclosing this information.
