This is great for cooking any number of things that require surface area along the pan bottom -- I can cook a pan of chicken and the use the same cookware to make a sauce, since this pan has both height and a larger bottom surface area for cooking. So far, it's been cleaning up easily.

This is a big, heavy pan and awkward to use unless you are prepared for the weight. But the mass and heat distribution of the bottom of the pan make it seriously good for low heat and slow cooking applications. The mass makes it very slow to respond to changes in heat but if you have non-stick cookware and are used to allowing the pan to come up to temperature at low to medium heat settings, this stainless pan is for you. The size, thermal mass and high sides make it more useful than a skillet for saute, braising and reducing sauces. It will get hot enough to brown meat but will take a while to cool down so be careful. If you are used to and like carbon steel saute pans this pan may not be for you. At under $70 this pan is a bargain.Addendum: f you give the pan time to reach the Leidenfrost point, or twice the boiling point of water, water droplets will bead and bounce around. That's because a layer of vapor is keeping them lifted from the surface of the pan. At that temperature a stainless steel pan will become virtually non-stick but must be kept at that temperature to remain so and that is why this pan's large thermal mass and heat retention makes it such a useful pan.However, for frying or saute (at medium to high heat) some type of fat is required. Meat will stick in most pans if the meat was added before the pan was hot, if there was insufficient oil, or if the cook tries to turn it before the crust has formed on the surface of the meat—a crust that can't be produced without the proper temperature and enough oil to encourage the searing process.

My stove is tiny and crappy so I have to heat everything on high or nothing heats. This results in a lot of scorching and burning if I'm not right on top of watching whatever it is cook. But this pan has the heat distribution and OH MY GOODNESS! A revelation. I almost didn't buy because of how inexpensive it is next to the 4Q - I thought the price had something to do with a lesser quality item but it doesn't. I'm not sure why the 4 Q is $100 more but I'd advise just to get this one. It's just large enough to make many one-pot meals or evenly brown just about anything and heat distribution works well even on small stoves like mine. Plus, it's a steal for the price.

El producto a la vista es muy bonito, pero yo resistan que dispara mejor ejercicio calor y de forma uniforme en toda su base... pero desafortunadamente no es así... aunque en sus características presumen de que si lo hace... decepcionado... esperaba más del producto

As someone who has always used non-stick pans, I was hesitant to buy a stainless steel skillet. Especially since I cook healthy with little or no oil.This is a beautiful and well made pan. It is heavy, with a super thick bottom. The build quality is superb.In cooking with little or no oil, things do stick more than with a non-stick pan, but it is not a deal breaker. A little stock or water to deglaze the pan works well. It does require more care, but not that much more. Soaking it for a few minutes prior to cleaning it helps. One thing I do notice is white spots on the bottom of the pan after I wash it. A little Bar Keeper's Friend is all you need to bring it back to its glory. All in all, this is a great pan. Highly recommended.

This was purchased as an addition to a 10" All Clad saute pan and I am really pleased with the result. The one criticism I would make is in the shape of the handle. When the pan is full, trying to support it with one hand and use the other hand to spoon out contents, it is impossible to tilt the pan as you do not have sufficient leverage to turn the pan.Other than that minor issue, this is a great pan. It is heavy enough to moderate temperature, but still responds to changes in temp well. It is flat and has not domed, despite multiple uses thus far, and is the right size for preventing spillage. (for now, until I get over enthusiastic and overload the pan). The lid fits well and the lid handle does not get overheated, although most of the stuff I do does not require extended time with the lid on, it was fine for the ten or fifteen minutes I had the lid on. Overall a very good value and a quality pan.

Breville Thermal Pro, I am liking this stuff more than any other cladded manufacturer these days, including All Clad. It's a bit heavier, but also far more substantial. This 5qt 12.5 inch pan is a workhorse. The lid also fits perfectly on Breville's more shallow 12.5 inch Thermal Pro Stainless Steel Frying Pan.Total volume: ~ 5qt or 5 litre ( filled nearly to rim, something one would probably never do )Max usable volume: ~ 3 qt or 3 litreDepth: 3.25 inches ( 8.25 cm )Rim Diameter: 12.5 inches OD ( 31.75 cm )Useful for general purpose, frying, simmering, saute, sauces, fricassee and possibly other braising depending on the meat or vegetable. Not bad for rice too, and actually makes a fairly nice tahdig if one is mindful of heat. Deep enough for shallow frying. Heavy base, induction compatible. Cleans easy. Conducts heat evenly, no hot spots.It is heavy, not as heavy as iron, but it is thick ply, with a substantial inductive bottom.
