Purchase a pasta maker a few years ago that wasn't a Marcato. The main machine works well but the cutters provided are aweful. They squeak and don't cut the dough all the way through especially the spaghetti cutter. Since the brand I got doesn't have an option for cutter accessories, I gave this a try since they all seem to be designed the same. Well, I guessed right because the Mercato attachment slid right into the main unit, even the handle roller. It doesn't squeak and cuts the dough all the way. I got the spaghetti chittara attachment and will be purchasing other options too.

I think I have figured out these attachments. They come in two basic configurations: square cut grooves and round cut grooves. The rest is sizing. All work well if you have your dough recipe figured out. Marcato also has a suggested thinness of dough for each attachment on one of their photos- it's worth studying. (And writing down). The round cut attachments make rounded noodles. All make delicious egg noodles. Cleaning? I've actually opened a couple up to shake out the dry dough bits, but I only recommend this for tinkerers such as myself who can accept the consequences of their actions...

Ottimo prodotto, lo uso abitualmente e mi trovo molto bene. Ho messo una sola stella alla voce richiesta “artigianalità” giacché riterrei che non sia affatto un prodotto artigianale ma chiaramente industriale. Ciò tuttavia non toglie nulla alla qualità.

うどん用に購入しました。非常に良いです。幅は3.5mmですが、厚さは2mmくらいになってしまうので、讃岐うどんには向きませんが、よく熟成させた生地だと、コシのある美味しいうどんが作れます。

Either Marcato has changed how they manufacture their pasta cutters or this is a knock-off. It makes decent spaghetti alla chitarra, but the pasta gets stuck in the plastic combs in the bottom of the cutter. It’s a pain to clean out. I haven’t had this problem with older pasta cutters I’ve bought.

蕎麦切りには2mm巾□切りの同社製品を使っていますが、更科蕎麦にはやや太すぎるのでこちらを購入。丁度更科蕎麦に良い巾です。また、中華麺のやや細麺用にも向いています。買って正解でした。耐久性はまだわからないのでとりあえず☆3つとしました。

This chitarra/tonnarelli cutter worked well for me the first and only time I've tried it so far. It has what appears to be aluminum cutter rolls with plastic combs on the outfeed that look like they guide the strands out. Whatever the reasons for the design changes from my vintage cutters, it seems to work well. The aluminum may have a little more "tooth" to help pull the dough through. Worked okay with American (coarser) semolina/egg dough rolled to #3, but I'm going to try a Caputo semolina double-zero no egg mix next batch so I can dry it for caccio e pepe, which just isn't the same with fresh.As somebody else noted, it's stamped "is made in Italy", but the markings on my other cutters are not consistent from one to the other, either. I have no reason to think this is counterfeit, but if it is, it's one that works.
