This is an authentic pizza shop screen. It works exactly as expected and allows me to make professional pizza with a crisp crust using a traditional home oven. Notes: 1. Remember to season the pan before using or the pizza will stick. I brushed both sides with oil and placed in a 450 degree oven for 20 minutes. 2. For safety, use a peel or a rimless sheet pan to remove the hot pizza from the oven. I have found it efficient to use a rimless sheet pan like a peel and slide it between the pizza and the screen in the oven. As a bonus, I turn off the oven without removing the screen, thereby allowing the pan to continue seasoning and preventing burned fingers from trying to extract a hot piece of metal from a 525 degree environment. 3. To maintain the seasoning, I never wash the screen with soap. In fact, I have not yet needed to wash the screen at all, since the design precludes a build up of crumbs and I've not spilled any sauce on it.

I bought both the 10 inch and 14 inch pizza screens. I bake the pizzas on a 1/4 inch steel plate on the bottom rack with the oven set as high as it will go. The screen allows moisture to escape from the dough and removes the need for a peel to get the pizza out of the oven. I use a fork on the screen to pull the pizza and screen off the plate.Before I top the pizza on the screen I pre-bake the crust for 3 minutes on a regular pan. This way the crust does not stick to the screen or sink into the screen. You don't need to oil the screen with a pre baked crust. Another 3 minutes on the screen and steel plate in the oven does it. This time would vary with ovens and toppings.The steel plate really holds heat and is virtually indestructible but will not absorb moisture like a pizza stone. I have had great results with this method.

I finally found a pizza dough recipe for my breadmaker that EVERYONE in my family loves.The pizza screens cook up that crust perfectly in a regular oven. They have a little bit of grab, which holds onto the dough. Dough does not stick onto it, so no oil/grease is required.Cleanup is pretty simple. Cheese does like to grab on, but a little bit of a soak makes it easy to remove.Depending on how big the crusts are when they're stretched out on the pans, I sometimes overlap these a tiny bit to get both on the same rack in my oven. But they work just as well on two separate racks.TIP: Make sure you wash these with some kind of dish cleaner that gets the grease off before you use it. They evidently but some kind of mineral oil on it to keep them shiny before purchase. Although it doesn't taste awful, it does look bad on your crust.
